I recently had a delicious Poke bowl with Jammy eggs at the local noodle bar and decided to find out how to do them myself. They let you add extra miso -jammy eggs, but charge $ 1 for a side of the egg that looked crazy to me. $ 24 in a dozen eggs ?? I can definitely do these at home.
After a few attempts, I finally called this recipe. Now these are one of my three best tapes to make eggs.

Soy sauce eggs, Japanese ramen eggs, Korean Mayak Gyeran… These eggs go many different names. Their roots are in the Asian kitchen and you will find Japanese, Korean and Chinese variations. Although the ingredients may vary according to the recipe, the basic idea is to marinate the soft cooked eggs in the marinate sauce.
Mirin (sweet rice vinegar), soy sauce, sesame oil and chili pepper are some common ingredients. This version has salty soy sauce, garlic and onions for spicy flavor and a little natural sweetness for the maple syrup.

Miso jammy egg recipe
These soy -marinated eggs have a soft center, which makes them jammy and salty. Gorgeous starter alone or sliced and served with salads or soups.
- 3 Small ship go away (white or yellow works best)
- ½ cup I'm a sauce (or tamari if gluten -free)
- 2 Small ship maple syrup
- ½ cup hot water
- 1 Small ship sesame seeds
- 3 carnation garlic (chopped)
- 4 green onion (chopped)
- 1 line sriracha (Optional, for a little kick!)
- 12 large eggs

Mix all ingredients (except eggs) in a large bowl and place.

Fill the pot with a few cups of water with high heat and bring to a boil lightly. If necessary, reduce heat, so the boiling water does not boil too hard.

Carefully add the eggs to the boiling water and cook for 6 minutes to the jammy yolk (slightly leaking in the middle). If you want a tighter yolk, then cook for 9 minutes. These cooking times give you a nice balance of soft, rich yolks with some solid egg whites.

Carefully remove hard cooked eggs from the water pots and place them in an ice cold water in a bowl to stop the cooking process. A few minutes after the ice water peel the cooked eggs. Don't worry if the egg shells get a little coarse – the marinade hides the flaws!

Take the peeled eggs from the ice bath and place them in a miso marinade container. Make sure the eggs are fully embedded in the liquid. If necessary, press with a spoon if necessary. Turn the lid on and cool the airtight container for at least 6 hours, but overnight is best for deep, tasting infusion.
