Amateur of all peppermint things, I had picked up a packet of peppery mint cooking crusts on a grocery store and dreamed of a chocolate cookie with pieces of peppermint instead of chocolate chips. I scanned the criticism of the Kathy cookies recipe and I saw that many users had replaced other types of fries for chocolate shavings: peanut butter fries and Scotlers' caramel shavings were only some of the variations mentioned. I knew that this recipe would be perfect for undergoing my peppermint chips for the holidays.
Mix and cook Kathy chocolate cookies was child's play, and I followed her recipe exactly, less by adding peppermint cooking crusts instead of chocolate. I dropped spoonfuls of dough on pastry plates lined with parchment, I cooked the cookies at 350 degrees F for about 10 minutes, then I cooled them on a rack.
