I had a friend in high school who loved French dress for everything, including his pizza. I never understood why he loved it so much. Because my mother and my eldest son like it a lot, I decided to find a good home -made version.
French dress?
French salad dressing, as we know, was not recently. Until the 1960s, the classic Frenchman Vinaigrette was originally a healthy oil and vinegar bond, and we are now calling it only vinaigrette. Vintage cookbooks listed spices, such as black pepper and lemon juice, later adding shallot, garlic powder, Dijon button and other ingredients.
Over the years, ingredients such as peppers (and even ketchup) were added to make the bright orange version popular today.
It may not be from France, but it is definitely an American favorite.
And until recently the FDA regulated French sauces. This is due to the fact that since 1920 mineral oil (yep, oil) became a popular reimbursement of olive oil. The mineral oil is undement and acts as a laxative, making it a popular replacement in salad dressing for weight loss.
Eventually, processed food brands created spin-off options such as Catalina sauce and creamy French sauce.
Real food French sauce
This homemade version made me understand why people love French dress so much. It is easy and delicious with only real food ingredients and not vegetable oils or refined sugar. We like it in almost any meal (except maybe pizza?). I tried to balance the original oil and vinegar with a slight sweetness that resembles a newer version.
I use white wine, but also red wine or apple vinegar (although they taste stronger). The tomato paste adds to the color and taste without adding tons of sugar. And honey adds a little sweetness and acts as an emulsification of oil and vinegar.
My children enjoyed immersing fresh vegetables in this salad dressing (probably because it resembles a homemade ketchup). If you are a fan of French dress (or maybe even not), try this healthier homemade versions.
