Who doesn't love ice cream on a hot summer day? Even if you avoid dairy products, there is no reason to forget! First I learned to make homemade ice cream when I avoided my son's dairy products years ago. Although I have added dairy products back to my diet, this dairy-free mint chocolate chip ice cream recipe is still a family favorite.
This mint chocolate ice cream gets its creamy coconut milk and avocado. Because making ice cream is our summer scoop list, I am happy to have a ice cream recipe full of nutrients and healthy fats so that children can enjoy.
I scream, yell, we all shout… avocado ice cream?
Instead of whipped cream or heavy cream, this mint chip ice cream gets its cream from avocados.
The avocados have such a slight taste and creamy structure that they are perfect for desserts. I used to use them in the Cucumber Limesta Plants and in real food shamrock. Every time I find a lot of avocados, I know it's time to store and make chocolate mint ice cream (and maybe some avocado browns).
Another reason for the avocados works so well for mint chocolate ice cream is the light green color they naturally add. However, it is not clear, such as the green food color found in the store's purchased versions (which is probably a good thing!).
Homemade mint chocolate chip ice cream with coconut milk
To make ice cream, I puree everything except the chocolate chips in one blender and then pour it on an ice cream cooker. I add chocolate chips when it starts thick. If you do not have an ice cream manufacturer, you can freeze it without one, stir in it occasionally until it rushes.
You can use half -sweet chocolate chips or dark chocolate for this. You can even use a chopped chocolate bar. Small chocolate pieces add a nice crispy texture to smooth ice cream. I always choose a darker chocolate because it has more health benefits and less additives.
This homemade version passes the granulated sugar and instead uses a touch of raw honey to sweeten. You can even make your own mint extract with fresh mint to add to this.

Make a dairy-free mint chocolate chips ice cream at home with coconut milk, avocado and honey.

Place all ingredients except blender chocolate chips and puree evenly.

Pour the mixture into the ice cream cooker and churn until it has thickened.

Add the chocolate chips and change more for 2 minutes.

At this point, ice cream is a very soft texture. You can either serve as a soft service immediately or pour the freezer into a safe bowl and freeze until it is ready for use.

Allow to melt at room temperature for 10-15 minutes before serving.
