I found this grain -free apple cinnamon muffin recipe made of apple sauce with despair. (Isn't it so true that the necessity is the mother of the invention?)
This morning I realized that I had only five eggs in the fridge – even close enough enough to feed all of us. Especially when every child could easily eat three each! I had coconut flour, homemade apple sauces and coconut oil with my hands, so I mixed them and… voilà!
The kids asked them every day for breakfast for a week, and the hub (and also “to-go”) breakfast recipe was born!
Best Apple Cinnamon muffins: a break from the norm
I'm here real … I haven't always been a big baker that I think makes sense, given that we often do not eat grains. Still, being a grain freedom can mean a lot of eggplant eggs for breakfast, and we all have days when only bakery products do. Even now, when Hashimotoni is gone and I ate grains (and even gluten!), I still enjoy coconut flour bakery products.
It always feels good to get it right and hit a recipe that makes both mother and children happy. These remind me of the apple pie, but in the muffin version.
If you haven't had coconut flour muffins before, know that they are slightly smaller and denser than a typical muffin. Still, they have that pastry structure and scent with apple taste. They are full of proteins and fiber and are gluten -free and grain -free. Not to mention the great health benefits of coconut, as these muffins use both coconut flour and coconut oil.
These apple cinnamon muffins stay in a regular round in our house and even start in the Wellness Mama of the breakfast department. Like almost all recipes in the cookbook, this muffin recipe will take 30 minutes or less real food parts and does not produce a lot of dirty dishes later.

Apple cinnamon… or any taste you want!
I chose this combination of apple sauce and cinnamon, but these muffins are incredibly versatile. I even noticed that with a few simple changes I could turn this recipe coconut flour cinnamon into apple pancakes!
Try these blends either muffin or pancake recipe to change things:

Reduce apple seam with ¼ cup and add excess banana before mixing

Mix ½ cup roasted chopped nuts such as walnuts

Mix ½ cup with fresh or frozen blueberries or raspberries

Add ½ cup chopped apples for extra texture

Add 3 tbsp cocoa powder to make almost cupcake-like muffins

The upper part chopped coconut before baking for extra wrinkling
- Skip the apple and make them orange cranberry or Lemon Blueberry muffins!

Abundant breakfast muffins that can be tailored to your special flavors.

Heat the oven to 400 ° F.

Lubricate the muffin pan with coconut oil or use silicone muffin cups or paper mountains

Stir in a large bowl of eggs, apple sauces, coconut flour, cinnamon, nutmeg, ginger, baking soda, baking powder, salt, vanilla, melted coconut oil or melted butter, honey and milk until smooth. Allow the muffin dough to sit for 5 minutes to allow coconut flour to absorb moisture.

Pour the dough with 1/3 cup measurement into muffin cans.

Bake for 12-15 minutes until the tops are golden brown and elastic back when they are lightly touched.

Allow to cool for 2 minutes, then drop the tops of the muffins with extra honey if desired.

Enjoy warm or store in an airtight container for up to 3 days.

If you often need breakfast, try to make a big lot of these and freeze them. Melt at the counter overnight before eating.
Try adding apple or apple pieces to add more apple flames to even more cubes. Fresh apples add more texture. If you like a bitter bite, choose Granny Smith Apples. Pink lady or honeyscrisk offers a sweeter taste or just use what your favorite is!
